These let me bring “pasta” back into LapBanded Living

One of the most important things about living with my lap band has been to find foods that taste good and are band friendly.  This is really easy to do in a gourmet food market.  I can buy my favorite, yellow fin tuna at $20 per pound, or lobster tails, or filet mignon…well, you get the idea.  Now back to reality.  I know I’m not buying those chips, or pretzels, or loaves of bread, or pies, or cakes and I’m not driving through fast food places for quick snacks while I’m on the road, but these days staying within a budget and preparing tasty, band friendly foods can be a challenge.  That is, until I decided to be creative.

Jennie-O Lean, Hot, Italian Turkey Sausage was on sale at my local market.  Buy one, get one free.  I picked up a package and read the label.  Each big, hot dog size link was 160 calories and 19 grams of protein and 10 links were $4.99 at the sale price.  That means 5 dinners worth of sausage for my husband and myself.  Hmmm, so what could I create with this spicy treat?  I grabbed a small container of low fat ricotta cheese off the shelf ( ¼ cup is 50 calories and 6 grams of protein), got a jar of Classico tomato basil pasta sauce at 50 calories per ½ cup with 2 grams of protein.  Now I had the pasta sauce with sausage and a cheesy flavor.  I can’t eat pasta (more than two little bites and I get stuck) so what now.  Ok, Shirataki noodles (in refrigerator section with the tofu).  Each little bag was 40 calories and 2 grams of protein.  For two of us I used two bags of noodles.

I prepared the noodles per the directions on the package and then took about 1/8 cup of ricotta cheese and dotted it around the noodles.  Meantime I removed the spicy sausage from the casing and browned it in a pan.  I poured 12 ounces of the Classico pasta sauce into a 4 cup glass bowl and covered it and heated in the microwave for about 3 minutes, then added the sausage and 1/8 cup of ricotta cheese and heated for 1 minute more (covered or you will have a mess in the microwave).  Heat the noodles and cheese and pour the sausage and sauce over it.  Sprinkle on a tablespoon of parmesan/reggiano shredded cheese and dig in and enjoy!  It is incredibly rich and spicy.  It tastes wonderful!  So, the total calories and protein for two servings is 620 calories and 56 grams of protein – if I eat my half that is 310 calories and 28 grams of protein and lots of wonderful flavors!  Now the cost came out to about $3.00 per serving, certainly a far cry from my $20 per pound ahi tuna.  Not bad for 10 minutes work in the kitchen !

Here’s the ingredient list:

  • Classico Tomato Basil Sauce
  • Shirataki Noodles (I like the angel hair, they also have fettucine)
  • Jennie-O Lean Hot Italian Sausage (I froze the ones I didn’t use in individual dinner size packaging)
  • Low Fat Ricotta Cheese
  • Shredded parmigiana/reggiano cheese
